Hello everyone! Today I am going to share with you a very yummy, healthy, and FILLING nutritious meal you can whip up for dinner tonight! Lets get started :)
What you will need:
- Half a pound of wild rice
- Half a pound of quinoa
- 2 green plantains
- Coconut oil
- Olive Oil
- Vinegar (I used coconut vinegar)
- Mixed baby greens
- Grape tomatoes
- Red onion
- 1 Avocado
- Agave Nectar
- SEASONINGS: Onion powder, dried basil, oregano, sea salt, cumin, and one fresh lime.
So to get started you will need to bring 3-4 cups of drinking water to a boil. Put ONLY the wild rice in to cook on medium heat until the grains start to break open. (KEEP TOP OF POT ON FOR QUICKER RESULTS)
Once rice is starting to finish cooking thoroughly, include the quinoa and your desired amount of the seasonings. Exclude cumin from the grains. We are saving this for last :)
Next, break out your frying pan!
For this, you will need about half a cup of coconut oil and the 2 green plantains sliced into medium to thin sections. Get the oil and get a "nana tester" (a piece of plantain to test if the oil is hot enough.) Once the oil is hot enough, dump one plantain at a time to cook and spread out evenly to cook. Once one side is turning to a light to medium golden amber tone, turn over quickly to the other side. Once both sides of all the slices are a golden brown/amber, remove all slices and place onto a plate thinly to cool off. Repeat with the other plantain and sprinkle with salt, set aside to cool.
Next, use the remaining oil from the plantains to sauté your chopped onions, halved grape tomatoes and seasonings. (If needed, add more coconut oil) This is where you will add the cumin and lime to the other seasonings for a zesty, tangy, and savory flavor to your sauté to top onto your main dish!
**Don't forget to check on your quinoa and rice to make sure its not too hot and burning at the bottom! It will NOT taste very good. I promise. **
And finally, take your baby greens, set them on the side of your plate. Take some of your sautéed tomatoes and set them on top. Next, take your agave, vinegar and olive oil to make a bitter sweet and smooth salad dressing. Sprinkle with salt and there is a salad!
To finalize your amazing efforts, plop some of your fluffy quinoa and wild rice mix onto your plate and top with your savory sauté! Fill up the empty spaces with your make shift potato wedges (They're Plantains though!), and there you have it.
