Brand new recipe for the food explorer! An amazing, mouth watering, and healthy dish you can whip up for dinner. You're gonna need the following!
- -Wild Rice
- -Quinoa
- -Portabello Mushrooms
- -Red onion
- -Cilantro
- -Cherry tomatoes
- -Avocado
- -Lime
- -Salad mix
- -Agave
- -Olive Oil
- -Vinegar
- -One orange
Seasonings:
- -Salt
- -Cumin
- -Onion Powder
- -Dried Basil
- -Oregano

Alright! So first, before we begin and to save a little time just so you know, this is a recipe I created as left overs from the last recipe I posted. If you wanna know how to cook the rice and quinoa, I suggest going back to my last recipe and checking that out :) I'm gonna jump right into what I did different to make a flavorful and completely different dish than the night before!
So first, I reheated the grain mix I cooked the night before in the same pot in was in, I just stuck it in the fridge after it cooked down. It saves time!
Next, I took my my onion, cherry tomatoes, mushrooms and seasons along with my fresh lime juice and threw it all on a sautΓ© pan to sizzle a bit in some olive oil. I also drizzled some agave nectar on top to caramelize the sautΓ©! Once it was done and exactly where I wanted it, I went ahead and dumped that in my grain mix and stirred it in thoroughly. Now, gear up your side salad with some baby greens, cilantro, salt, vinegar and olive oil with agave drizzled on top!
To finalize this amazing and colorful dish, cut some orange slices to garnish the top and take the rest of the orange and squeeze the juice all over it. Carve an avocado and pour yourself your favorite drink. Enjoy!
